Creamy Beef & Mushroom Skillet
A rich and comforting gluten-free skillet made with browned ground meat, mushrooms and a light Greek-yogurt sauce. It is cooked in one pan and served without pasta, rice or bread for a satisfying lower-carbohydrate meal.
What you need
Ingredients
- 400 g mixed minced beef and pork
- 250 g white mushrooms, sliced
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1/2 red bell pepper, thinly sliced, optional
- 150 g plain Greek yogurt
- 1 tbsp olive oil, if needed
- 1 tsp ground paprika
- 1/2 tsp ground turmeric
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1 tbsp fresh parsley, chopped
- 1/2 lemon
- 1/4 tsp chilli flakes, optional
Cooking method
Step by step
-
Remove the Greek yogurt from the refrigerator before cooking so it can lose some of its chill.
-
Heat a large frying pan over medium-high heat and add the minced meat. Break it into small pieces and cook for 6–8 minutes, stirring occasionally, until well browned.
-
If the meat releases a large amount of fat, carefully remove the excess while leaving a small amount in the pan for flavour.
-
Add the chopped onion and cook for 3–4 minutes until softened.
-
Add the garlic and cook for about 30 seconds, stirring continuously.
-
Add the sliced mushrooms and optional red bell pepper. Cook uncovered over medium-high heat for 5–7 minutes until the mushrooms release their moisture and begin to brown.
-
Add the paprika, turmeric, black pepper and salt and stir for about 30 seconds.
-
Reduce the heat to low.
-
Place the Greek yogurt in a small bowl and stir in 1–2 tablespoons of the hot pan juices to temper it.
-
Gradually stir the tempered yogurt into the skillet.
-
Warm gently for 2–3 minutes without allowing the sauce to boil.
-
Add a squeeze of lemon juice and adjust the seasoning if needed.
-
Finish with chopped parsley and optional chilli flakes, then serve immediately.
